Ingredients
1.5
cup
mixed nuts and seeds
1
cup
pitted dates
1/3
cup
coconut oil
1
cup
chocolate chips
(or as much as desired)
Instructions
Prep a baking tin with baking paper.
Chop the pitted dates and place them into a bowl. Cover with boiling water for 5-10 minutes and then drain.
Chop the mixed nuts and seeds via a food processor or blender (I use my Ninja nutri-blender).
Combine the dates and nuts into a mixing bowl and mix well.
Pour most of the coconut oil in into the bowl, leaving approx. 1 tbsp for later. Mix well.
Place mixture into the prepared tin and press it down evenly with a spoon.
Melt chocolate and stir in remaining coconut oil. Pour it over the top of the mixture and spread evenly.
Allow it to set in the fridge for 1-2 hours. Once it’s set, cut into squares.
Store in an airtight container in the fridge.
Notes
Soaking the dates is to help soften them, but if you’re using fresh soft dates you can skip this part.
