Chocolate Nut Slice

A delicious chocolate treat that is also packed with fibre, healthy fats and micronutrients.

Ingredients

  • 1.5 cup mixed nuts and seeds
  • 1 cup pitted dates
  • 1/3 cup coconut oil
  • 1 cup chocolate chips (or as much as desired)

Instructions

  • Prep a baking tin with baking paper.
  • Chop the pitted dates and place them into a bowl. Cover with boiling water for 5-10 minutes and then drain.
  • Chop the mixed nuts and seeds via a food processor or blender (I use my Ninja nutri-blender).
  • Combine the dates and nuts into a mixing bowl and mix well.
  • Pour most of the coconut oil in into the bowl, leaving approx. 1 tbsp for later. Mix well.
  • Place mixture into the prepared tin and press it down evenly with a spoon.
  • Melt chocolate and stir in remaining coconut oil. Pour it over the top of the mixture and spread evenly.
  • Allow it to set in the fridge for 1-2 hours. Once it’s set, cut into squares.
  • Store in an airtight container in the fridge.

Notes

Soaking the dates is to help soften them, but if you’re using fresh soft dates you can skip this part.
