Chocolate Nut Slice [GF]

I introduce to you, chocolate nut slice. If you follow me on either of my instagram accounts, you would already be familiar with this recipe. I am obsessed. This is my go-to recipe for when I want chocolate, but I’m looking for something a little healthier. It was given to me by a lovely friend a couple of years ago and has since been slightly modified.

The mixed nuts and seeds not only give you plenty of ‘plant points’ for supporting your gut health, but the fat and protein helps to slow the rise in blood sugar. In other words, it helps to reduce the sugar spike that comes with eating chocolate alone. To top it off, both nuts and dates contain a good dose of micronutrients.

And for my fellow Coeliac and gluten intolerant friends, this recipe is naturally gluten free. Just be cautious of what chocolate you use. I use Nestle baking chocolate bits as they are gluten-free ‘by ingredient’ and don’t have any ‘may contains’. I also recommend checking bags of mixed nuts to make sure there isn’t any ‘may contain gluten’ labels.

Chocolate Nut Slice

A delicious chocolate treat that is also packed with fibre, healthy fats and micronutrients.
Prep Time:15 minutes
Course: Dessert, Snack
Servings: 20

Ingredients

  • 1.5 cup mixed nuts and seeds
  • 1 cup pitted dates
  • 1/3 cup coconut oil
  • 1 cup chocolate chips (or as much as desired)

Instructions

  • Prep a baking tin with baking paper.
  • Chop the pitted dates and place them into a bowl. Cover with boiling water for 5-10 minutes and then drain.
  • Chop the mixed nuts and seeds via a food processor or blender (I use my Ninja nutri-blender).
  • Combine the dates and nuts into a mixing bowl and mix well.
  • Pour most of the coconut oil in into the bowl, leaving approx. 1 tbsp for later. Mix well.
  • Place mixture into the prepared tin and press it down evenly with a spoon.
  • Melt chocolate and stir in remaining coconut oil. Pour it over the top of the mixture and spread evenly.
  • Allow it to set in the fridge for 1-2 hours. Once it’s set, cut into squares.
  • Store in an airtight container in the fridge.

Notes

Soaking the dates is to help soften them, but if you’re using fresh soft dates you can skip this part.
