Happy Sunday! If you’re looking for some meal prep inspiration today, I have you covered. Now that it’s winter here in Australia (as my freezing fingers will attest), I’ve been loving making some warm, cosy meals. Having these on hand throughout the week, makes healthy eating so easy.
As always, everything I made was gluten free and coeliac-friendly. If you have Coeliac Disease, or even IBS or food intolerances, I highly recommend incorporating some food prep into your routine. When you have dietary restrictions you often have to put more thought into what you eat and prepping helps to take out some of that decision fatigue throughout the week.
If you’re wanting to be a little more organised in your approach to healthy eating, but feel overwhelmed by the idea of meal prep, check out my post on flexible meal prep. This is basically where you prep ingredients, sides and/or snacks as opposed to pre-portioned meals. It gives you healthy options to mix and match throughout your week, but allows more flexibility. My last food prep post is an example of this!

Vegetable Soup
This soup is on repeat at the moment. It’s packed full of veg, it’s warm and it’s delicious.
You can find the recipe over on @dietitianchante, which is my IG dedicated to all things Coeliac Disease, IBS and food intolerances. However, I have made a couple of changes:
- I’ve been making it on the stove as opposed to a slow cooker.
- The veg and the quantities I use changes every time, I just add in what I’ve got! However, I always make sure there’s plenty of pumpkin in there for the taste.
What’s great about this recipe is it’s so easy to make, and it’s a wonderful way of using up leftover veg in the fridge.
Zucchini Slice
This zucchini slice also featured in my last food prep post. It’s delicious and nutritionally balanced with a source of protein, fibre and healthy fats. It makes a delicious snack or quick meal (2-3 squares) with a salad. You can find the recipe here.

Chocolate Nut Slice
If you follow me on socials (@chantelousee on IG and TikTok) you may have come across this recipe a couple of times. It is one of my favourite sweet snacks to make. If you’re after a chocolate snack, but looking for something a little on the healthier side, you will want to try this. It’s also easy to make, no-bake and only has four ingredients: mixed nuts, dates, chocolate and coconut oil. You can find the recipe here.
Chicken and Vegetable Bake
This recipe is always a go-to in the winter. Not only is it delicious, but it’s nutritionally balanced with a source of a source of protein, fibre and healthy fats. It can take a little more time to prep than the other recipes but it makes life during the week so much easier. You can find the recipe here.

You can absolutely maintain a healthy lifestyle without meal prep, but for me personally, having nutritious food on hand makes life so easy. Particularly during busy weeks!
